Information to Accompany Wild Deer
From 1st September 2011, a Wild Deer Intake Document (see link below) must be completed for each wild deer received at Game Handling Establishments approved by this Department. One document can be used for a number of deer, but only when they were shot in the same locality within a reasonable timeframe e.g. a day's shoot.
The hunter should complete the first part of the document. The second part of the document is to be completed by trained persons/ hunters as prescribed by the EU Food Hygiene Regulations. Currently there is no training course, approved by the Competent Authority in the ROI, which satisfies the requirements of the Hygiene Regulations. However, such training of hunters in line with the Hygiene Regulations is due to commence in the near future. Therefore untrained hunters should tick the box for "No, and a trained person isn't in a position to sign the declaration" and leave the second part of the form blank. Untrained hunters must present the form along with the whole deer including the head and all viscera (internal organs), expect for the stomach and intestines, to the Game Handling Establishment.
Trained Persons - as per Intake Document for Wild Deer
In accordance with EU Food Hygiene Regulations* persons who hunt wild game with a view to placing it on the market for human consumption must be trained to undertake an initial examination of wild game on the spot. Training must be provided to the satisfaction of the competent authority to enable hunters to become trained persons. The significance of this specific training in conducting an initial examination is the head and viscera (internal organs) need not accompany the carcase to the game handling establishment.
Currently an inter-agency working group involving the relevant competent authorities is considering what training is required and how best to oversee such training is conducted in a satisfactory manner.
